I have here almost a dunum [1000 square metres], half of which is planted with vegetables. I plant it every year. This is planted with every type of vegetable I can. I mean, zucchini, eggplant, okra, everything. Now, [vegetable] marketing is bad here, so we thought – my son and I – of making a café or restaurant. First, people sit and take a rest. They drink; they eat. If you want, there’s shisha. Then we promote our products here, and people buy them. Our purpose is that the visitor sees how we pick [the vegetables] and come to the kitchen to cook them. We’ll go down and see with our own eyes how [they’re grown]. The first thing concerning our plan for the restaurant [is that] we want to make a short, simple film: an advertisement, you know.
[It will show] down from the farm to here, the views in the morning and at night, the external view of the restaurant at night. We’ll promote it on Facebook. There is, for example, foods we photograph and post. People come from outside Bethlehem, [from] Jerusalem, from Beit Safafa, and be absolutely sure that we treat them kindly [and] respectfully. I mean, [giving them] mint for free. We’ve dealt a lot with people from the area. They have information via Facebook, some publications or films about Battir, so they come especially. I mean, there were many broadcasts about Battir and about the terraces. There was a woman who came from Japan, for example. Before this time, they weren’t [coming]. – Fuad
